Well I almost forgot about this thing!! Haha. Planning on starting it back up, so here is a recap of things since my last post. Hope I dont leave anything out! 😉
So, after I got licensed, I started working at a local Salon/Spa/Botique. Sadly that didn’t work out so I switched salons and it’s definitely been for the better!! 🙂 My boyfriend and I officially got engaged in February. We’ve moved out of his parents house but instead are living with his sister and we’re all sharing a very nice trailer. Mostly, I’ve just been working my butt off, since this nice weather I’ve taken up gardening again! I’ve also started cooking more and eating out less, not only cooking more but making it healthy! I’ve started exercising everyday and doing yoga, and making the small repairs to the trailer. As far as I think that’s enough talking! Picture time! 🙂 The first picture is of the first quiche I have ever made! It turned out delicious! :)) The second picture is over easy egg with a sprinkle of cheese on toast with a side of avocado and tomatoes seasoned with salt and pepper. 🙂 It. Is. Delicious. 🙂
So! I have not actually made this recipe yet..for lack of ingredients, but I wanted to share it because it looks and sounds OH SO DELICIOUS!!! I got it from a friend who posted it on facebook from somewhere she got it..haha.
2 lbs flank steak
1 yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 jalapeno, seeded and chopped
for spice rub—
2 tsp chili powder
1 tsp cumin
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
your favorite salsa
Mix together all spices in a small bowl. Rub the spices all over your flank steak—be generous here! Then, place your steak at the bottom of your crock pot.
Cover the steak with the chopped onions, bell peppers and jalapeno pepper. Turn heat on LOW and cook for 8 hours.
After 8 hours, remove meat from crock pot and shred with a fork. It should be incredibly easy to shred. You can either stick the shredded meat back in the pot for another hour or serve as is.
To serve, heat your corn tortillas in a skillet on the stove. Spoon some carnitas on a tortilla then top with salsa, avocado, cilantro and a squeeze of lime.
Enjoy with a margarita for best result.

It has cucumbers, avocados, cherry tomatoes, onions, cilantro, minced garlic, lime juice, olive oil, salt, and pepper.
I have been wanting to eat healthier and such for a while so I finally went out and bought vegetables and fruits and blah blah…so I picked up an avocado in the store, because my friend loves them and says they are amazing. I figured why not. So I bought it. I got home and realized, I had never actually had an avocado before…(besides guacamolie)..which meant I didn’t know how it tasted. What do I do? Not google it lol. Instead I contact my friends mother, asking how best to eat an avocado. She sends me the above recipe and today (2 days later) I finally try it. AND IT WAS AMAZING. I have dabbled in cooking so I knew what all my other ingredients tasted like so I adjusted the amounts of things to make sure everything came together nicely.
It turned out awesome. Even my mother in law, who hates raw onions, loved it. She didn’t even pick out the onions. 🙂 We also brain stormed and figured if one doesn’t like it as is, you can simply eat it with tortilla strips, or make it into a sandwich, or put it on little biscotti pieces. Heads up, I tamed down the cilantro quite a bit and it was still slightly overpowering.
- 4 cups avocados, diced medium
- 2 cups grape (or cherry) tomatoes
- 2 cups cucumbers, peeled and diced medium
- 1 cup red onion, diced small
- 4 tablespoons fresh cilantro, chopped
- 2 teaspoons fresh garlic, minced
- 2 tablespoons lime juice
- 1/4 cup olive oil
- salt (as needed)
- black pepper (as needed)
Toss all ingredients in a bowl, or on a bed of lettuce.
One of my struggles in life….is making hard boiled eggs. Laugh all you want, but when I try and make them, 2 out of 4 are under-cooked! It’s ever so frustrating. I’ve looked on the internet, asked my mother, my best friend’s mother and my mother in law. I just cannot seem to do this! In the pictures I’ve posted along with this, you’ll see that I managed to half-cook one. (both pictures are the same egg) I made 3 in that batch and this was the only one that wasn’t done…well…completely done. It was so strange i had to take a picture of the oddity. If anyone has any suggestions or an easier way to make hard boiled eggs please let me know!
